It’s almost ridiculous how addicting these Chocolate Truffle Cookies are! Delicious, rich, and indulgent.

Tessa's Recipe Rundown

Taste: The chocolate in these cookies is rich, indulgent, almost ridiculous. I stored my cookies in a ziploc bag and every time I opened it the smell of chocolate was intoxicating.
Texture: Dense, fudgy, and chewy. A cross between a cookie, brownie, and flourless chocolate cake. When stored in the fridge these cookies are even more fudgy.
Ease: Not as straight-forward as other cookie recipes I’ve featured because of the steps that include melting chocolate and beating whipping eggs. Not to mention the time this recipe requires to chill in the fridge but believe me, every step is SO worth it.
Appearance: When my cookies first came out of the oven they had that thin, crinkly top that some brownies have which made me practically squeal with excitement.
Pros: This cookie combines all my favorite desserts into one.
Cons: Not an everyday type of recipe because of the somewhat time-consuming steps and indulgence.
Would I make this again? Most definitely. I might very well be addicted.

These cookies are like crack: addictive and euphoric (but not deadly!). I’ll admit it, I’m a chocoholic. I need to eat chocolate at least once a day or fits of rage might ensue. These chocolate truffle cookies are the perfect fix for a any chocoholic. I mean, just look at the ingredients list. There are four (FOUR) sources of chocolaty goodness in each and every cookie. Will you be able to resist making these chocolate truffle cookies?

Ingredients

  • 4 (1 ounce) squares unsweetened chocolate, chopped
  • 1 cup semisweet chocolate chips
  • 6 tablespoons butter
  • 3 eggs
  • 1 cup white sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1 cup semisweet chocolate chips

Instructions

  • In the microwave or in a metal bowl over a pan of simmering water, melt unsweetened chocolate, 1 cup of the chocolate chips, and the butter stirring occasionally until smooth. Remove from heat and set aside to cool.
  • In a large bowl with an electric mixer, whip eggs and sugar until thick and pale, about 2 minutes. Stir in the vanilla and the chocolate mixture until well mixed. Combine the flour, cocoa, baking powder and salt; gradually stir into the chocolate mixture. Fold in remaining 1 cup chocolate chips. Cover dough and chill for at least an hour or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Roll chilled dough into 1 inch balls using a spring-loaded cookie scoop. Place on ungreased cookie sheets so they are 2 inches apart.
  • Bake for 9 to 11 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Gosh there's so much chocolate in these they remind me of my chocolate brownie recipe. Very delicious.

This is perfect snacks while we are watching our favorite movies. My kids will surely love this and especially my hubby who used to like chocolate-y cookies.

I just made these and yes they are like crack. Rich, chocolatey, gooey little drops of yumminess! The kids ate like 4 each before they even cooled. They only issue I had was the bottoms never got really hard, next time I will bake them another min or two.

Lol! These cookies are like crack… lol! That is something I have been known to say. Not that I know what crack is like or anything :)I LOVE chocolate truffle cake so chocolate truffle cookies! I have to try them 🙂
