Taste: You cannot taste the cauliflower, promise! This just tastes like pizza! Texture: The texture is not identical to traditional pizza dough, but if you are on a special diet or trying to watch your carb intake, it definitely gives you the feeling of eating pizza. You know how they say you shouldn’t go grocery shopping on an empty stomach? You also shouldn’t watch food videos, TV shows, or go on Pinterst on an empty stomach. It’s practically torture. However, it can also be very useful in trying to decide where you want to go out to eat for date night or what kind of meals you want to add to your weekly dinner plan. I can’t tell you how many times I’ve been inspired to try out a recipe or create a whole new one because of a video I saw. I am such a visual person, which is why I’ve introduced videos to this blog. I’ve also been doing some more step-by-step photos for recipes that could benefit from them, such as my post for Texas Roadhouse Bread Rolls. Those babies are definitely for carb-overload day.
Today’s recipe, however, is low-carb and also gluten-free. And no, it doesn’t taste like cauliflower. It tastes like pizza, somehow. I’ve discovered cauliflower is a mystical mold-able food that can taste good as a pizza crust or even as an Alfredo sauce. Cauliflower Crust Pizza
Ingredients
For the crust:
- 1 small head cauliflower, or half of one large head
- 1 large egg
- 1/4 cup finely shredded mozzarella
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 2 teaspoons olive oil
For the topping:
- Pizza Sauce
- 1/2 cup finely shredded mozzarella
- Pepperoni
- Other desired toppings
Instructions
For the crust:
- Preheat oven to 450°F. Spray a large baking sheet or pizza pan with nonstick cooking spray.
- Cut the florets from the cauliflower and place in the bowl of a food processor. Process for 30 seconds, or until the cauliflower looks like tiny crumbs. Alternatively, grate the whole head of cauliflower using the large holes of a box grater. Place crumbled cauliflower in a large microwave-safe bowl. Microwave for 8 minutes. Let cool.
- Place the cauliflower in a kitchen towel and squeeze out as much liquid as possible. Add egg, mozzarella, garlic, salt, pepper flakes, oregano, garlic powder, and olive oil to the cauliflower, stirring to combine. Pat the mixture into about a 12-inch round on prepared pan. Brush with olive oil.
- Bake for 12 to 15 minutes, or until golden.
- Remove crust from oven and adjust oven setting to broil. Top the pizza with sauce, mozzarella, pepperoni, and any other desired toppings. Broil for 3 to 4 minutes, watching carefully, until the cheese is melted, bubbling, and begins to brown. Cut into slices and serve hot.

I have been seeing cauliflower pizza crust recipes floating around for a while now but have yet to try it because I was just a bit skeptical that it would actually work. Your video makes me realize it will!
I agree with not knowing about squeezing out the excess water. That TOTALLY makes sense now that I think about it! Love the videos, as always!

Thanks for the recipe and video tutorial! Never thought about using cauliflower as the main ingredient in a pizza crust, but it’s a great idea to eat pizza w/o feeling unhealthy. Thanks for sharing 🙂
Really happy you made this video I definitely didn’t know you had to squeeze out excess water which is exactly a step that can literally make or break this crust! Any news on deep cleaning the Breville Smart Oven? Also just want to say I really noticed a difference in this videos lighting and liked it a lot 🙂
