Farmer-owned dairy co-op Tillamook is known for their amazing cheese products and they also happen to make incredible ice cream! Amazing & fun flavors made from only the highest quality ingredients, perfect for ice cream sandwiches! What I love most is that you won’t find any weird artificial ingredients like high fructose corn syrup. My favorite choices for this challenge? Tillamook’s Oregon Strawberry, Mudslide, or Peanut Butter Chocolate flavors!

How It Works
Pick your ice cream flavor and pair it with any cookie recipe you want! My favorite combinations are above, but feel free to mix-and-match and get creative. More ice cream sandwich tips down below!

How to Make Ice Cream Sandwiches
Step One: Bake ANY cookie recipe! I tend to prefer cookies that are either pretty soft even frozen or fairly thin so you can still use a generous scoop of ice cream and bite into them easily. Freeze your cookies until frosty before assembling! This helps prevent melting. You can make your homemade cookies in advance and freeze them in an airtight container for a week before assembling.
Step Two: Take one cookie, place a scoop of ice cream on top, and sandwich with another cookie. Put it in the freezer until it’s firm, and then it can be devoured. If making ahead of time, wrap each ice cream sandwich individually in plastic wrap and store in the freezer for up to 1 week.
DROP COOKIES: To make the sandwiches picture perfect, place a large sheet of plastic wrap on a work surface. Take a scoop of ice cream and wrap the plastic around it. Using the bottom of a measuring cup or glass, press down on the scoop of ice cream until it is flattened and matches the diameter of the cookies.
CUT OUT COOKIES: If you’re using cookie cutter cookies, place softened ice cream in a large flat container such as a rimmed baking pan. Cover & freeze until solid. Use the same cookie cutter you used for the cookies to cut out slices of ice cream then assemble your sandwiches.
