This month’s challenge recipe pick is Ice Cream Sandwiches (ANY FLAVOR)! All of the details and rules are detailed below.

How It Works

Follow these steps to participate in the challenge:

To Participate:

Pick your ice cream flavor and pair it with any cookie recipe you want! My favorite combinations are above, but feel free to mix-and-match and get creative. More ice cream sandwich tips down below!

How and Where to Share:

Take a photo of your sandwiches and share before July 31st 11:59pm PST. CLICK HERE TO SUBMIT YOUR PHOTO. You can share photos from Facebook, Instagram, Twitter, or upload them directly from your computer, but they must be submitted here to be included.

How to Win:

Every person who submits a photo following those directions will be entered into a random giveaway to win one Grand Prize (1) $250 Gift Card to BLK + GRN and supply of Tillamook Ice Cream for the rest of 2020!* Two (2) First Place Prize winners will receive a Tillamook Ice Cream bundle including 3 ice cream coupons and Tillamook ice cream swag!

About the Recipe

How to Make Ice Cream Sandwiches


Step One: Bake ANY cookie recipe! I tend to prefer cookies that are either pretty soft even frozen or fairly thin so you can still use a generous scoop of ice cream and bite into them easily. Freeze your cookies until frosty before assembling! This helps prevent melting. You can make your homemade cookies in advance and freeze them in an airtight container for a week before assembling.

Step Two: Take one cookie, place a scoop of ice cream on top, and sandwich with another cookie. Put it in the freezer until it’s firm, and then it can be devoured. If making ahead of time, wrap each ice cream sandwich individually in plastic wrap and store in the freezer for up to 1 week.

DROP COOKIES: To make the sandwiches picture perfect, place a large sheet of plastic wrap on a work surface. Take a scoop of ice cream and wrap the plastic around it. Using the bottom of a measuring cup or glass, press down on the scoop of ice cream until it is flattened and matches the diameter of the cookies.

CUT OUT COOKIES: If you’re using cookie cutter cookies, place softened ice cream in a large flat container such as a rimmed baking pan. Cover & freeze until solid. Use the same cookie cutter you used for the cookies to cut out slices of ice cream then assemble your sandwiches.
