About the Recipe



Tip One: Try using a potato ricer or nut milk bag to wring as much excess water from the grated zucchini as possible. Too much water will create a more gummy, dense, or under baked texture.

Tip Two: This recipe is best baked in an 8-inch metal baking pan. Metal conducts heat more quickly and efficiently than glass or ceramic so you won’t have any issues with an under-baked center. If you must use glass or ceramic, increase the baking time by about 5 to 10 minutes and reduce the oven temperature by 20°F.

Tip Three: For a moist cake, be sure not to over measure your flour and cocoa powder. Spoon and level or better yet, use a digital kitchen scale!
