TASTE: These sandwiches are bursting with spicy, vibrant flavor. One look at this ingredient list and I knew it would be one of the ones I would turn into a recipe! I particularly love how the fresh lemon cuts through the spiciness of the blackened chicken and the richness of the spicy aioli. TEXTURE: The chicken has that charred crust on the outside but is so moist, juicy, and tender inside. I love any sandwich on chewy ciabatta bread and the broccoli slaw adds some nice crunchy texture. This particular recipe submission for Spicy Blackened Chicken Sandwiches centers on those fabulous Just BARE® chicken breasts and one of my favorite fan-submitted ingredient lists that I received. All throughout the recipe development process I used a few various cuts of chicken from Just BARE® and my boyfriend and I kept remarking about how amazing this chicken is. I am so excited I get to work with a brand that I believe in and thoroughly use and enjoy myself. It’s such a great perk of my job!

Spicy Blackened Chicken Sandwiches
Ingredients
- 1 (12 ounce) bag broccoli slaw
- 1/4 cup spicy aioli
- Juice of 1 lemon
- Salt and freshly ground black pepper
- 4 Just BARE® boneless skinless chicken breast fillets
- 1 heaping tablespoon prepared blackened seasoning
- 1 loaf ciabatta bread, cut into 4 sandwich portions
Instructions
- In a medium bowl combine the broccoli slaw, spicy aioli, and lemon juice. Season with salt and pepper to taste and toss until well coated. Refrigerate until ready to use.
- Meanwhile, prepare the grill for cooking over direct medium-high heat. Sprinkle both sides of the chicken with the blackened seasoning, pressing the seasoning into the chicken to coat well.
- Once the grill is smoking hot, place the chicken on the grates. Turn the heat to the lowest setting. Cover and cook for about 4 minutes, or until blackened. Turn and cook on the other side for about another 4 minutes, or until the chicken reaches an internal temperature of 165°F. Remove the chicken to a plate, loosely tent with foil, and let rest for 5 to 10 minutes.
- Divide the chicken breasts between ciabatta slices. Top with the broccoli slaw mixture then sandwich with the remaining bread pieces. Serve.
What blackening seasoning do you recommend?
If you can find it, Chef Paul Prudhomme’s Magic Seasoning Blends makes a good blackening seasoning. Zatarain’s does too!
