How many times have you let out a sigh when it finally came time for your lunch break because you had something so boring and bland packed in your lunch box that you couldn’t even enjoy your break? Or how about those days when you forgot to pack a lunch and had to eat some sloppy, sad fast food meal? Or worst of all, those times where you skipped a meal to work through lunch. That is no fun.
Lunch has always been a challenge for me, whether I’m packing it for work or eating at home. It’s a meal that is often hurried and “blah.” I can’t tell you how many PB&J sandwiches I consumed as a child. I’m pretty sure I never want to see one again. You can only eat the same thing daily for so long before you grow completely tired of it.
That’s where Sargento‘s “Take A Real Lunch” program comes in. It focuses on natural and fresh ingredients to help inspire you to create delicious lunches that evoke excitement rather than boredom. As someone who loves food, I want everyone to look forward to every meal of the day and take the time to savor the flavors. So when Sargento invited me to create a fun and flavorful lunch recipe using their Natural Sliced Cheeses , I was thrilled. Unlike many sliced cheese products, Sargento’s is made from real block cheese and adds that distinctly wonderful cheesy flavor to your sandwiches. They offer a wide selection of sliced cheeses with many flavors and even reduced fat options.
While scanning the Sargento sliced cheese options at my local market, the idea of their Natural Blends caught my eye and I ended up taking home some Provolone-Mozzarella slices. Check out the recipe below to see how I used them in these Chicken Caprese Sandwich Wraps to take to work. Sargento even outfitted me with a lunchbox which was awesome because I’ve been relying on paper bags for way too long!
Chicken Caprese Sandwich Wraps
Ingredients
- 2 boneless, skinless cooked chicken breasts, shredded
- 2 tablespoons balsamic vinegar
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 1/4 cup basil pesto
- 4 whole-wheat wrap breads
- 8 slices Sargento provolone-mozzarella blend
- 4 romaine lettuce leaves
- 1/2 cup halved cherry tomatoes
Instructions
- In a small bowl combine the chicken, balsamic vinegar, Italian seasoning, salt and pepper.
- Spread 1 tablespoon of pesto over each wrap bread. Lay cheese slices and lettuce over wrap. Divide chicken mixture evenly among each wrap. Top with tomatoes and roll up.
