S’mores Stuffed Pizza Cookies are filled with pieces of chocolate bar, marshmallow, and graham cracker and are the ultimate ooey gooey cookie indulgence.

The other day I was at the gym on the elliptical machine. This is something that must be done in order to indulge in something as crazy as s’mores stuffed pizza cookies. However, I saw something almost as amazing as these giant cookies. Two rows ahead on a treadmill was a middle-aged woman speed walking, looking totally normal. I continued about my workout, watching the news on the TV screen in front of me when something caught my eye. I turned back to find that woman performing a full-fledged choreographed jazzy dance routine while still speed walking on the treadmill. She was extending her arms all the way out in a rhythmic motion, moving her hips with attitude, and doing this without any visible ear buds playing music or for any apparent reason. It was utterly entertaining. Everyone was watching her strange and random performance but she didn’t seem to notice at all. I actually stayed on the elliptical for an extra five minutes just so I could keep watching her. I almost felt as though there was a hidden camera watching our reactions to this dancing outburst.

I was watching her with a smile because she seemed really passionate about whatever she was doing. I applaud her for having the courage to perform in public with no fear of what people might think about her. I would be way too self conscious to ever do something like that. The thought of doing Zumba in public still freaks me out a little. What’s the most unusual thing you’ve ever seen someone do in public? What’s the most unusual thing YOU’VE ever done in public??

I used the Lodge 14-ounce mini cast iron servers* for these pizza cookies. You could also use mini pie 0r cake tins.

Recipe Rundown
Taste: Exactly how you’d imagine a s’mores stuffed cookie to taste like! I was worried these would be too sweet so I reduced the amount of sugar I would regularly use.
Texture: The best part. Ooey, gooey, chewy, crunchy, thick, and all around amazing with a glass of milk or a scoop of ice cream.
Ease: Easy and fun.
Appearance: You can’t tell what kind of amazing surprise is waiting for you inside these babies.
Pros: Yes, yes. yes.
Cons: Not an everyday treat.
Would I make this again? Oh yeah.

S'mores Stuffed Pizza Cookies

Yield: Serves 4-8

Ingredients:

1 stick unsalted butter, melted
1/3 cup granulated sugar
1/3 cup packed brown sugar
1/2 teaspoon vanilla
1 large egg
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup semisweet chocolate chips
2 Graham crackers, broken into large pieces
1 Hershey’s bar, broken into large pieces
4 marshmallows, cut in half

Directions:

Preheat oven to 400°F. Spray 2 6-inch pie plates or cast iron baking dishes with nonstick cooking spray.

In a large bowl, use a rubber spatula to stir together the butter, granulated sugar, and brown sugar until combined. Let stand for 5 minutes. Stir in the egg and vanilla. Add the flour, baking soda, and salt, stirring until incorporated. Fold in the chocolate chips.

Divide the dough into 4 equal pieces. Press two pieces of dough into the bottom of the prepared pans. Divide the graham cracker, Hershey’s bar, and marshmallows between the dough. Flatten out the remaining two pieces of dough and press over the marshmallows.

Bake for about 15 minutes, or until edges are slightly browned but the inside is still gooey. Let cool for five minutes before serving.

    I’ve seen so many people at the gym on the treadmill doing funky things like that, or be-bopping around to their music. Often times I feel like doing that, but I don’t have the guts! lol These pizza cookies look so great! I would love to make this in my cast iron skillet very soon. I’m off to the gym just thinking about it!

    Whoa, when you say stuffed cookies, you really mean stuffed cookies! I love the concept here. I tried something like this and it was nowhere near as delectable as yours turned out, so I made cookie sandwiches instead. I should have just waited for your recipe!

    I’ve been dropping by your site for a few weeks now so I thought I’d should post something to say “Hi! You have a new fan.” It is exciting to see a young gal doing what she enjoys and engaging your visitors.

    These cookies look delicious! I plan to bake some later this week.

    Your gym story reminded me a New Year’s Eve Party at a hotel many years ago. This older gentlemen whose dress style remained firmly in the 70s was dancing around with no restraint and no rhythm. Many folks were pointing at him and thinking he was a spectacle but I love it! You could see the pure joy on his face and he was having the time of his life. No fear! He was definitely living out loud.

    As for your question, I think it is playing my air guitar in the car to a great rock and roll song on the radio.

    Oh my gosh – I’ve seen someone doing something similar at the gym too! I could NOT stop watching, but it made me so darn happy since it looked like she was having such a great time. And on a side note: have you ever seen the “Prancersize” lady? She is a hoot.

    Annnnd I am seriously drooling at the thought of these cookies. Holy moly!

    These s’mores pizza cookies are amazing!!!! i am a die-hard s’mores fan. love love love them in any shape or form. And that is too funny about that woman at the gym. My gym has some great people watching – but mostly just people I shake my head at. The woman at your gym? more power to her!

    These look absolutely amazing! The cookie is the most perfect “cookie brown” and it just looks so fluffy and delicious! I think I’m going to have to try this out this weekend. Looks perfect for a movie night at home.

    As for gym performers… I have a lady at my gym that grunts constantly while she runs on the treadmill, it’s so annoying/disturbing and she clearly could not care less that everyone makes faces behind her, oy i get embarassed for her!

    Is it possible to cook this over a campfire? My cousin during a camping trip up in the mountains had actually cooked a sort of pudding-cake over a campfire in a cast-iron pot lined with parchment paper.
