I have a fun post for you today! PF Chang’s invited me to dine at their recently refreshed restaurant location at the Waterfront shopping and dining district in Scottsdale, Arizona. Not only was the restaurant’s interior refreshed, so was their menu. I was invited to sample their latest seasonal summer menu which features light and fresh summer selections along with a few invigorating cocktails. So I brought along a girlfriend and we had a blast chatting and munching on these summer goodies. I also managed to snap a few Instagram pictures with my phone to show you guys!

We started dinner off with a Moscow Mule, which is typically made with ginger beer, vodka, and lime. To my delight, P.F. Chang’s makes their own ginger beer in house. If you’ve never had ginger beer you must try it immediately! The drink was delectably strong and paired nicely with the fresh summer menu.

For an appetizer we decided to venture out into a dish we had never tried before: Peking Duck Rolls. I made Peking Duck in culinary school but I’ve never had it in a rice paper roll with an assortment of fresh summer veggies. The rolls were served with an outstanding mango-jalapeno vinaigrette that I actually want to recreate at home. The flavors and textures were uniquely tantalizing and certainly whetted our appetites for more fresh food.

We ended up sampling a few dishes off the menu, which is part of the reason why I enjoy eating at P.F. Chang’s. If I’m going to make Asian food at home, I’m only going to make one dish. I can’t remember there ever being a dinner where I had the time and energy to make several dishes to serve at once, family-style, so everyone could taste a little bit of everything. That is something that is so worth dining out to experience every once in a while.

We tried two entrees from the summer menu, one of which was the Grilled Prawns with Chilled Peanut Noodle Salad. I love seafood and I love peanut sauce so this was an obvious choice to me. The prawns were big and meaty and perfectly cooked, I could have eaten those all night. The cold noodle salad had a great balance of fresh, nutty, and spicy flavors to keep things interesting.

The second summer entree we tried was the Korean BBQ Chicken Stir-Fry, which just sounds amazing. At least our waiter made it seem that way. Those little bites of chicken were smothered in a sweet and spicy red chili sauce and served with fresh veggies. I can certainly see why the waiter recommended it!

Lastly, we couldn’t skip dessert. And since our other menu selections were so light and summery it seemed completely acceptable to indulge. At least that’s what I’m telling myself. On the regular menu was a dessert called the Chocolate Dome, which turned out to be an incredibly rich and chocolaty flourless cake that was just out of this world.

Did any of that sound good to you? If so, enter my giveaway below for a chance to win a gift card so you can too can sample the seasonal summer menu!

Your manager at KC Plaza location is excellent! Has excellent memory in greeting customers and the food is always hot and tasty—go there once a month when in town and have no complaints–you need to keep her because she has to increase business–knew previous manager and she has them beat hands down–food is excellent and hot when served!
