Being a food blogger and writing a cookbook about ice cream sandwiches inherently means sampling quite a few foods that aren’t exactly healthy. That’s why I try to focus on balance. I like to indulge in things that I think are worth it (a homemade ice cream sandwich, a piece of perfectly fried chicken, etc.) rather than impulse items (a stale and bland cookie from the break room at work, a can of soda, etc). Additionally, I try to get in as many fruits and vegetables as possible. Drinking one of these smoothies everyday really helps you to get in as many whole foods as possible – just look at the ingredient list! Not to mention green smoothies like this energize you and are perfect body fuel for after a workout.

Taste: Sweet and happy. You can’t taste the spinach AT ALL.
Texture: Smooth and slightly thick. I like my smoothies relatively smooth so they’re easier to swallow but if you like really thick smoothies feel free to use less liquid.
Ease: Very quick and easy.
Appearance: Beautifully green without tasting very green.
Pros: Delicious and full of nutrients with zero guilt.
Cons: Absolutely none.
Would I make this again? I make this smoothie (or a variation of it) almost everyday.
My Favorite Green Smoothie
Fun and healthy variations:
-try replacing half (or all) of the spinach with kale leaves
-use unsweetened low fat yogurt or coconut milk instead of almond milk
-experiment with different frozen fruits, I especially like mango
Yield: 1 to 2 servings
1 apple, cored
1 medium banana
2 cups baby spinach
3/4 cup frozen pineapple chunks
3/4 cup ice cubes
1/2 cup unsweetened almond milk
Place all the ingredients in a high-powered blender and blend until smooth.
