I love, love, love olive oil. I use it practically daily. I use it to saute vegetables and proteins because of its good fats and good flavor. Recipe Rundown
Taste: Perfectly seasoned, earthy, savory, rich, addicting.
Texture: The biscuits are slightly crumbly with a golden, crisp exterior and soft, fluffy interior.
Appearance: Rustic. I love that you can see the flecks of herbs.
Pros: Very easy yet impressive. You can substitute your favorite herbs (use a little more – 1 1/2 – 2 tablespoons – for more delicate and mild herb varieties). Healthier than biscuits made with butter.
Cons: None.
Would I make this again? Yes. Next time I might sprinkle a little Parmesan on top during baking.

Olive Oil & Herb Biscuits
Yield: 12-14 biscuits
Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon finely chopped fresh rosemary
2/3 cup milk
1/3 cup extra-virgin olive oil
Directions:
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
Sift together flour, baking powder, and salt. Mix in rosemary. Add milk and olive oil and mix until just combined. Don't over-mix.
Drop golfball-sized rounds of dough on prepared baking sheet. Bake 10-12 minutes, or until cooked through and golden brown.

Over the summer, I roasted a couple of heads of garlic in the oven. All I used was a little olive oil and some salt. I spread that garlic on top of slices of a nice, crusty bread; I also used it in a homemade hummus. That's a simple, but delicious, way I use olive oil.

i love to soak fresh herbs and minced garlic in fresh olive oil, then just serve on fresh baguette with a sprinkle of salt!

We typically use it for all of our cooking, but I'll be using some this week for roasting brussels sprouts!
My favorite is definitely for roasting vegetables although I like to infuse the olive oil with herbs or other flavors and use it as an dipping sauce for fresh bread as well!
My favorite way to use olive oil is to make an Olive Oil Italian Dipping Sauce for fresh out of the oven bread. There is truly nothing more heavenly than that, to me.

I made these and there wasn't enough liquid at all, and so of course they ended up over mixed trying to get all the flour to mix in, and they were super dry!
Brooke, I'm sorry you had problems. However, I'm inclined to think you made an error in your measurements as the ratio of flour to fat to liquid in this recipe is well-tested and what I learned in culinary school. When I made these biscuits the dough came together easily (it was slightly shaggy, not wet) and produced biscuits that were slightly crisp on the outside and soft and tender inside. Not overly dry.
My favorite way to use olive oil is for roasted root vegetables. So simply but so yummy!

Wow! Made these last night for Thanksgiving dinner. There were no leftovers! Since the boyfriend hates rosemary with a passion, I subbed in a tsp of dried parsley and a tsp of mural of flavor from Penzey's. This will be my go-to drop biscuit recipe from now on. Thank you for sharing it!

I say that my favorite way to use olive oil is in a simple tomato bruschetta, but really it's just an excuse to dip crusty bread in yummy olive oil when the toppings run out!

@ Tessa – When the bf was younger, his Mom made steaks crusted w/ rosemary. He refers to rosemary as “twigs.” I wouldn't want it on my steak, so I guess I can kind of understand.
My favorite way is to make a paste of zatar in extra-virgin olive oil, slather it on the inside of a pita bread, add some chopped tomatoes, some slices of cheese (I used Ackawi), red pepper hummus, a slice or two of avocado… the possibilities are endless. http://therichvegetarian.com/2011/03/stuffed-pita-breads/ is something I posted about it.
Oh I have a recipe for biscotti that uses olive oil in it. They are wonderful cranberry pistachio cookie that I always make at christmas.

I looove roasted asparagus using just olive oil and sea salt
Last Sunday I went to gather rosemary with some friends of mine, and as soon as I went back home I made this rosemary-mini-breads. They were so nice, so flavored. Great idea you gave me, thank you!

I have tried this recipe last year and just loved it. And I live in Crete, Greece, where rosemary and olive oil are very easy to find and simply amazing, so you can imagine the outcome! Then, when I went home for Christmas, I made it for my family and everyone went mad, especially my brother. This weekend, for Orthodox Easter, I made them again when I went as a guest to some friends of mine and, again, everyone just loved them. So, thank you for this amazing recipe and looking forward for some new ones!
